We’re proud of the honey we produce—most of it comes straight from our own apiaries across the Byron Hinterland. Sometimes, when nature demands, we may go further afield to meet demand, but we always source from trusted beekeepers who share our commitment to raw, chemical-free practices.

What Does “Raw Honey” Mean?
Our honey is:

  • Unpasteurised – we never apply high heat.Course filtered – we strain gently to remove large wax particles, but we don’t remove the beneficial pollen, enzymes, or nutrients.
  • Minimally processed – just as the bees made it.

 

Why Isn’t My Honey Clear Like Supermarket Honey?
Most supermarket honey is ultrafiltered and heat-treated to stay clear and runny on the shelf. That process removes pollen, enzymes, and other beneficial nutrients—and often damages the flavour.

At Byron Raw, we use course filtering only, which means:

  • We remove large wax particles
  • But we keep the good stuff—pollen, enzymes, antioxidants, and natural texture
  • So, if your honey looks a little cloudy or thick, that’s exactly how it should be. It’s the raw, real deal.

 

Do You Heat the Honey?
We use steam-powered knives to uncap the honeycomb—this is a traditional, low-impact method. We also gently warm honey when needed for bottling, but never above hive temperature (around 34.5°C). Heating above this can destroy valuable enzymes—so we simply don’t do it.

How Do You Render Beeswax?
Rendering beeswax does require heat—but we take care. We use double boilers, never direct heat, to protect the wax’s integrity. This preserves its colour, scent, and natural antibacterial properties.

Why Does My Honey Look Cloudy or Grainy?
That’s candying—a natural process where the sugars in raw honey crystallise over time. It’s not a flaw; it’s a sign your honey is real and raw.
What to do:

  • Enjoy it as-is (it’s perfect on toast).
  • Or gently warm the jar in a bowl of hot water to return it to liquid.
  • Avoid microwaves—they can overheat and damage the honey.

 

What’s the Shelf Life of Honey?
By law, we apply a Best Before Date on all our jars.

But here’s the truth: raw honey doesn’t spoil. Archaeologists have found 3,000-year-old honey in Egyptian tombs—and it was still edible.

Is Honey Safe for Everyone?
No. Honey should never be given to infants under 12 months. It can contain natural spores of Clostridium botulinum, which may cause infant botulism—a rare but serious illness. For older children and adults, it’s completely safe.

What If My Honey Is Fermented?
Fermentation can happen if honey has excess moisture or is stored in a humid environment.

  • Signs of fermentation:
  • Bubbles or foam near the surface
  • A tangy or yeasty smell

 

It’s still safe to eat, though the flavour may change. If you’re not happy, let us know—we’re happy to offer a replacement or refund.

Real Honey Isn’t Cheap — and Cheap Honey Isn’t Real
There’s a sticky truth the big brands don’t want you to know: much of the honey on supermarket shelves isn’t honey at all.

Cheap “honey” is often cut with sugar syrups, ultra-filtered, or blended from undisclosed sources. That’s not just dishonest — it’s harmful to the environment, to your health, and to real beekeepers who care for their bees.

 

Why It Matters
Genuine honey is a natural, labour-intensive product. It takes tens of thousands of bee flights to make a single jar. Real beekeepers care for their hives year-round, follow the seasons, and harvest with respect — not with shortcuts.

  • Mass-market honey is often:
  • Ultra-filtered to the point of removing all pollen
  • Diluted with rice or corn syrup
  • Sourced from dubious international suppliers
  • Labelled vaguely — think “blend of EU and non-EU honeys” or “product of multiple countries”

Independent testing in Australia found that nearly 1 in 5 supermarket honey jars were adulterated with imported syrups—while honey from local beekeepers passed purity tests with flying colours.

Even If It Is Real Honey…
Check the label.
Many bottles that do contain real honey are still imported — often from China or India. If you care about the environment, your health, and supporting local industry, then buy 100% Australian-produced honey.

How to Spot Real Honey

  • Buy from local or ethical producers (like us)
  • Look for words like raw, unfiltered, and single-origin
  • Be suspicious of bargain-basement pricing — bees don’t work for free!
  • Avoid vague sourcing labels and stick with transparent brands
